Crémants du Jura
THE crémant of jura represents approximately 20% of the production from the fifty hectares of domaine by Stéphane Tissot. It's no small feat, and he therefore offers several very different cuvées in their production and grape varieties. "I reserve the higher-altitude plots, those with less sun exposure, for the production of Crémant. 11 degrees at harvest is perfect for a crémant "even if there may be a little bit of 12° at the assembly," explains Stéphane Tissot.
