It's a domaine A pioneer of biodynamic viticulture in Burgundy is changing hands. Didier Monchovet, having no successor, is handing over his 12-hectare estate to Boris Champy. Didier Monchovet founded his estate in 1984. domaine eponymous to Nantoux , in the highlands of Beaune Boris Champy, a winemaker and Burgundian by adoption, was born in 1974. Originally from Champagne, he is an oenologist (graduating in 1996) and worked for 10 years in Napa Valley, California (Dominus, Famille Moueix) before becoming technical director of the maison Louis Latour from Beaune and, more recently, manager of the Clos of the Lambrays (Morey-Saint-Denis). He was also president of the ODG Corton and founder of an environmental protection association. Boris Champy is also an Ironman triathlete, a swimmer who crossed San Francisco Bay, and a pilgrim who completed the pilgrimage (2004 km) to Saint Jacques from Compostela Dijon .
It is a smooth handover between the two men, which began informally during the 2019 grape harvest.

My goal will be to highlight the specific vineyard sites, to showcase the varying degrees of microclimates, the different exposures, and other fascinating subtleties. At altitude, in these hills and valleys, we will practice a form of viticulture somewhat different from that of the main wine-growing region. Our plots are islands of biodiversity: multiple " clos "But also trees, hedgerows, walls and dry stone walls, fruit trees… We will take a holistic approach. Our goal will be to seek freshness and personality in our wines, with a style of vinification "Refined and natural," explains Boris Champy.
