Here are the portraits of the year's rising stars and our "favorite" wines among the vintages presented by the estates during the meeting.
Vaudoisey-Creusefond A pioneer in Pommard
Alexandre Vaudoisey arrived in 2009 on the domaine family. Supported by his wife Laure, he produces flavorful, fresh, and precise wines. On the nine hectares ( Pommard , Volnay , Meursault , Auxey-Duresses The conversion to organic farming officially began in 2024, formalizing an environmental approach already underway. In the winery, intervention is minimal. vinification The red wines are made in wooden vats, with gentle extraction and the exclusive use of indigenous yeasts. Alexandre Vaudoisey reduces sulfites and filtration to the bare minimum, embracing the spirit of "natural" winemaking without explicitly claiming the label. Aging, spread over fifteen to eighteen months, is intentionally minimal in new oak, with modest proportions (often less than 30% depending on the cuvée), including on the... pommard premier cru Épenots, flagship wine of the domaine Always striving for innovation, the winemaking couple distinguished themselves in 2022 by becoming the first in Burgundy to implement a deposit system for their bottles. Among their most recent projects, experimenting with ceramics in aging wines should offer a neutral alternative to oak, thus ensuring the safety of these wines produced using very low-input practices.
