THE Château Gilly-les-Cîteaux becomes the Sources of Vougeot

The Château in Gilly-les-Cîteaux (21) will reopen after a complete renovation which highlights more than ever a place linked to the great Cistercian history of Burgundy.

Let us state from the outset that this article is not a "disguised" advertorial, but the renovation of the Château of Gilly-les-Cîteaux (21) impressed us so much that we are dedicating these few lines to it. Château of Gilly is an emblematic place linked to the long Cistercian history of Burgundy. It was a residence of the Cistercian monks who, in the 13th century, built a majestic cellar there where they stored wines produced just a few hundred meters away in the Clos -de- Vougeot of which they were the monopoly owners until the French Revolution.

Hotel-restaurant luxury, the château was operated by the Grandes Étapes Françaises chain until its sale in October 2022 to the Les Sources group, which also owns Les Sources de Caudalies in Bordeaux, Les Sources de Cheverny, and soon a third location in Alsace. After keeping Gilly open for a year, the group embarked on extensive renovations, which are now nearing completion. The Château will open its doors in a few days, on February 26. The forty-nine rooms, divided into five categories, have been completely renovated, a restaurant area has been built, but the most impressive thing is undoubtedly this spa and its two indoor pools which now stand in the cellar; a truly magical place where history and modernism blend with great class and which will be open to everyone, hotel guests and visitors from outside with a wide range of prices (from €140 per person for one hour of care, two hours of access to the pool and sauna and €180 including lunch).

Julien Martin, the chef.

On the restaurant side, Les Sources de Vougeot will offer two options: L'Auberge des Cîteaux, restaurant bistronomic (45 € for the set menu including starter, main course, and dessert) and Le Clos de la Tour, gastronomic rstaurant (menus at €120 and €180) which aims simply for a Michelin star, "and as early as March 2027," affirms Julien Martin; this 35-year-old chef from Avallon has everything to achieve his goals: a team of twenty people, a "high-tech" kitchen and the experience of having already earned a star in the Gard region, at Château de Collias, after having trained alongside Nicolas Masse, a two-Michelin-starred chef at restaurant La Grand'Vigne, at the Sources de Caudalies.
